Vinification
The origin
Caparbio is crafted from a blend of estate-grown indigenous grapes: Corvina, Corvinone, Rondinella, Molinara, and Oseleta.
In the glass, it reveals a deep, brilliant ruby-red color.
On the nose, it opens with elegant floral notes that blend harmoniously with aromas of ripe red fruits such as raspberry and blackberry, enriched by a delicate hint of vanilla and a subtle touch of spice.
On the palate, it impresses with its drinkability, supported by a well-structured yet silky tannic texture that brings balance and depth.
A wine that pairs beautifully with convivial moments and richly flavored dishes.

- Medium-aged cheeses
Vinification begins with careful manual harvesting of the grapes and follows the traditional Ripasso method, which involves refermenting the fresh Valpolicella wine on the Amarone pomace.
The contact with the skins lasts about twenty days, enriching the wine with structure and complexity.
After fermentation, the wine is aged in small French oak barrels for at least two years, followed by an additional year of bottle aging before release.
The name Caparbio reflects the determination with which Alice and Veronica set out to create a unique wine, born from a strong, conscious vision: faithful to tradition, yet able to stand out with its own personality.
The rose on the label is a symbol rich in meaning: a tribute to Maria Rosa, the grandmother from whom this family story began.
At the same time, it recalls the shape of our Cru when seen from above, becoming a visual expression of the bond between the land and emotional roots.
The three roses represent the three generations behind this project: the grandmother, the mother, and now us, Veronica and Alice.
