Vinification
The origin
Adone is born from a careful selection of only indigenous grapes from our estate: Corvina, Corvinone, Rondinella, and Oseleta.
In the glass, it shows an intense ruby red color, crossed by subtle garnet reflections that anticipate its structure.
On the nose, it is broad, complex, and elegant: enveloping notes of wild berry jam intertwine with hints of tobacco and licorice, revealing a mature and layered bouquet.
On the palate, it stands out for its richness and harmony. Ripe fruit and spices merge in a deep, velvety sip, where the balance between softness, freshness, and sapidity is perfect. The finish, long and mineral, closes with a persistent and timeless emotion.

- Ideal as a meditation wine or to share at the end of a meal.
The vinification involves a manual selection of the best grape clusters, which naturally dry for at least five months, developing concentration and aromas.
After pressing, a long cold maceration follows, along with a slow fermentation at controlled temperature with remontages and manual punch-downs, promoting balanced extraction while preserving the wine’s natural sweetness.
The aging takes place in French oak barrels for at least five years, without filtration, followed by one year of bottle aging to perfect the harmony before release.
The name Adone is inspired by the mythological figure of the god of beauty, an eternal symbol of harmony and charm.
A name chosen to tell the sweetest and oldest soul of Valpolicella, one that spans generations and becomes the liquid memory of the land.
The rose on the label is much more than a simple graphic element: it holds a deep and personal meaning.
It is a tribute to Maria Rosa, our grandmother, who with love, commitment, and passion, gave birth to our family story.
At the same time, it recalls the shape of our Cru, which from above resembles a rose, thus becoming the perfect symbol of the intertwining between emotional roots and territory.
The three roses composing the symbol represent the three generations that have created and carried forward our project: grandmother Maria Rosa, mother Daniela, and today, we sisters, Veronica and Alice, who continue the legacy with the same spirit.
