ἔμβλημα: An enchanting mosaic of sensations

Production
2,500 bottles, produced exclusively in the best vintages.

Type
Smooth, Aged Red Wine.

Grapes
A unique blend featuring all 10 grape varieties cultivated on the estate:
Corvina, Corvinone, Rondinella, Croatina, Cabernet, Oseleta, Teroldego, Merlot, Marzemino, Rebo.
A mosaic of varietals that expresses the deepest identity of our land.

Harvest
Manual, from late September through October.
The grapes are harvested at optimal ripeness, then laid in plateaux for a natural drying period of about 45 days, concentrating aromas, structure, and smoothness.

Soil
Calcareous, tuffaceous, poor and rich in stones: a soil that naturally limits vine vigor, promoting concentration and longevity.

Vinification
After drying, vinification takes place in temperature-controlled stainless steel, with daily manual operations to ensure full extraction from the skins and a slow, balanced fermentation.

Aging
The wine matures in medium-sized French oak barrels for at least 5 years, followed by an additional 12 months in bottle to complete its evolution.

Pairings
An elegant and profound wine, ideal with refined and sophisticated dishes such as:
beef tartare, Culatello di Zibello DOP, aged and flavorful cheeses, and extra dark chocolate.
Also perfect on its own, as a meditation wine.
