Grapes sourced exclusively from the Monte La Parte Cru, the most prestigious vineyard of our estate.

Harvest
Manual, between late September and early October.
Only the healthiest and ripest bunches are carefully selected and laid in plateaux for a natural drying process in the fruttaio lasting over 100 days.
This results in a weight loss of over 35%, concentrating sugars, aromas, and structure.

Soil
The Monte La Parte Cru is characterized by a high presence of exposed calcareous rock, a feature that enhances the production of wines with great elegance, depth, and aging potential.

Vinification
Fermentation and extended maceration for 30 days in temperature-controlled stainless steel (18 °C), ensuring a gentle yet complete extraction of aromatic and polyphenolic compounds.

Aging
Aged in medium-sized French oak barrels for at least 5 years, followed by an additional 12 months in bottle, ensuring balance, refinement, and a silky finish.

Pairings
A wine of remarkable structure and depth, ideal with rich meat-based first courses, premium cuts of red meat, game, fine cured meats, and aged cheeses.
Also perfect as a meditation wine, to be savored slowly during intimate and reflective moments.
