Our Cru:
A tale of a family Riserva 

 
Production | 1.000 bottles produced only in the best vintages.

Tipology | Dry red wine for ageing.

Grapes | Corvina, Corvinone, Rondinella, Oseleta, Molinara and Croatina, only property grapes, hand selected from Cru Monte La Parte.

Harvest | Manual, in late September.

Soil | Calcareus, tufaceus, meager and rich in skeleton.

Vinification | A rigorous selection identifies the best bunches on the vines. One by one, the clusters are preciously laid on the cretes and than this ones are stored in fruttaio (Drying room). The drying process is all natural with no air conditioning system and it lasts longer than 3 months reaching up to 35% of weight loss. After a cold maceration of 15 days, the slow fermentation lasts at least a month. It takes place in stainless steel  tanks under controlled temperature that never exceeds 20°C. The delicate pump over and delestage allows the maximum extracion of polyphenolic compounds.

Aging | The wine rests in medium-sized french oak barrels for 5 years. It waits at least 1 year in bottle before the sale. 

Food pairings | Wine of great structure, it will be a good combination with intense red meat and game dishes like deer fillet. Excellent with salame or aged Parmiggiano Reggiano DOP. Meditation wine.
Colour
Ruby red color with garnet reflections.
Nose
Explosive nose with mature red ripe fruit: cherry, plum and blackberry blend with an intense vanilla bouquet typical of the oak.
Taste
Harmonious, round and rich palate, a spectacular softness and integrity. Dense, complex and an ever persistent after taste.
