Recioto della Valpolicella DOCG

Greek God of beauty
with a timeless sweetness

Production | 2.000 bottles only made in the best vintages.

Tipology | Red sweet dessert wine.

Grapes | Corvina, Corvinone, Rondinella, Oseleta, Croatina, only hand selected grapes of the property Cru Monte La Parte.

Harvest | Manual, in late September.

Soil | Calcareus, tufaceus, meager and rich in skeleton.

Wine making | The mature grapes are selected and laid one by one, in small crates of 4/5 kg. The grapes are then left in  fruttaio (drying room) longer than four months in order to obtain a weight loss up to 50%. The vinification takes place in stainless steel tanks with daily pump over. The spontaneous fermentation can last up to three months and is stopped naturally.

Aging | The wine refines in 5hl French oak barrels for at least 5 years and it’s bottled without previous filtration.
Recioto also rests at least 1 year in bottle before the sale. The total winemaking takes 7 years.

Food pairings | Full body sweet wine. Perfect match with dry pastries like the crumbly sbrisolona, bittersweet chocolate or the Christmas cake Panettone. Fine taster will also find a perfect combination with local goat cheese made in Lessinia or blue cheese like Gorgonzola DOP. Often recommended as meditation wine.

Ruby red colour with violet reflections.
On the Nose it reveals notes of ripe fruit such as black cherry, raspberry and plum, with a hints of spices.
Full-body, round and elegant sweetness. Good balance between acidity and tannins. The constant presence of Morello cherry in every taste culminate in a dense, fruity and infinite persistence.
