Production | 8.000 bottles.

Tipology | Dry red wine.

Grapes | Corvina, Corvinone, Rondinella and Molinara, only property grapes hand selected.

Harvest | Manual, in late September.

Soil | Calcareus, tufaceus, meager and rich in skeleton.

Vinification|A rigorous selection identify the best bunches that will partially dry in fruttaio (Drying room) for 30 days. The alcoholic fermentation runs for more than 20 days, in stainless steel tanks at controlled temperature (20°C). Regular delestages allow the maximum extraction of polyphenols from the skin and seeds for a suitable tannic structure.

Aging | The wine is refined in 5 or 30 hl french oak barrels for 3 years and few extra months in stainless steel tanks. It spends at least 6 months in bottle before the sale. 

Food pairings | Wine of great structure, perfect paired with red meat and game dishes. Recommended with hard-cheeses and the traditional veronese cuisine: risotto all’Amarone, stracotto di asino (donkey stew meat).
 

Colour
Ruby red with purple hues.
Nose
Elegant and complex on the nose, floral and wood notes, berries accompany eucalyptus and smoky flavour with a touch of balsamic.
Taste
Soft and well balanced, it can give you fruity sensation of cherry and raspberry combined with a subtle vanilla. Dynamic, persistent and elegant finish.
